Serves 6 to 8
2 tbls olive oil
5 tbls bread crumbs
1/4 tsp ground cardamom
1 kg cherries, pitted
6 tbls flour
500g Greek yogurt
1/4 cup honeyPreheat oven to 180c.Oil a 12-inch deep round baking dish.
Mix the bread crumbs with the cardamom and dust the inside of the baking dish with mixture.
Spread the cherries over the bottom of the dish.
Beat the eggs and add flour and mix well.
Add the yogurt and beat for 3 minutes.
Add the honey and beat for another 2 minutes.
Pour this mixture over the cherries in the baking dish and bake for 40 – 45 minutes until top is lightly browned.
Remove from the oven and let the clafouti cool to room temperature or chill.
Cut into wedges. Top each with whipped cream, if desired
